As you may or may not know, I absolutely love Sweden. And Christmas. And what says Sweden and Christmas more than cinnamon rolls (kanelbullar in Swedish, yes, I’m slowly learning EMOJI).
As I was explaining in my Vegan Christmas Roast recipe post, I was invited to a Christmas dinner party, and decided to bring some homemade cinnamon rolls. (I’ve got a little secret though: they taste awesome the next day with some homemade vegan nutella – I’ll share that recipe later ;) ).
Ingredients for about 15 pieces:
For the dough
250ml (1 cup) plant milk
500gr (2 cups) flour (I used spelt)
20gr (0.7oz) sugar (I used coconut sugar)
50g (1.75oz) vegan butter
1 cube of yeast
1 pinch. Cardamom
For the filling
80gr (3oz) vegan butter
120gr (1/2 cup) sugar (I used coconut sugar here, too)
1 1/2 tsp Cinnamon
Recipe:
· Prepare the yeast: warm up the milk and mix it with the cube of fresh yeast, the sugar and 2 tbs of flour, and let the mix rise for about 20 minutes
· While the yeast mix rises, mix the flour with the cardamom and the vegan butter
· Add the yeast mix to the dry ingredients and knead for a while. If you have a kitchen aid, you’re lucky! I didn’t, so I used my hands and kneaded for about 20 minutes (watching Friends comes in handy, sometimes…)
· Let the dough rise for about 30 minutes and preheat the oven at 180°C (350°F)
· Meanwhile, mix the vegan butter with the sugar and cinnamon
· Roll the dough, slather the cinnamon mix and roll the rolls or tie the knots (see what I did in the video below)
· Let the rolls sit for about 15 minutes, pour a little bit of sugar on top and bake for about 20 minutes
· You can decorate them with sugar or frosting! Enjoy!
